Berry-licious Angel Roll

INGREDIENTS

  • 1 box Angel Food Cake Mix

  • 1 cup powdered sugar (divided)

  • 8 oz. light cream cheese (room temperature)

  • 1 1/2 cups heavy cream

  • 1 teaspoon vanilla extract

  • 1 1/2 cups fresh strawberries

  • 1 1/2 cups fresh blueberries

  • 1 1/2 cups fresh raspberries

DIRECTIONS

  1. Preheat oven to 350° and line the bottom of a normal cookie sheet with parchment paper. DO NOT grease and make sure paper lays flat on the bottom.

  2. Prepare cake mix according to package directions. Pour into prepared pan and bake for 20 minutes. The top should be golden and edges cracked.

  3. Loosen cake from edges while it’s still warm.

  4. Spread clean towel on a flat surface and sprinkle 1/4 cup of powdered sugar on top. Flip warm cake out onto towel and peel off the parchment paper. Immediately roll up with the towel starting at short end of the cake. Cool for 1 - 2 hours.

  5. While cake is cooling, beat cream cheese, 3/4 cup powdered sugar, vanilla extract, and heavy cream until stiff peaks form.

  6. Unroll cooled cake and spread with half of the cream mixture and berries. Roll the cake back up without the towel and place on a serving dish.

  7. Top with the rest of the cream and berries. ENJOY!

*If you wanted to skip the "roll" part, you can make it in a trifle bowl! Simply break up the cake into small chunks and place 1/3 of them in a large bowl. Then, top with cream mixture and add berries on top. Repeat!

*I've also made a light fruity drizzle for a garnish! Just mix some strawberry jelly and water! It's really an extra berry flavor if you like!
