INGREDIENTS
1 small eggplant
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon sea salt (or to taste)
1 teaspoon Italian seasoning
1 teaspoon parmesan cheese
1 teaspoon olive oil
nonstick cooking spray
DIRECTIONS
Prepare a baking sheet by coating it in nonstick spray.
Slice eggplant into circles, then cut in half.
Add sliced eggplant into a large bowl and drizzle with olive oil. Add in spices and parmesan cheese and toss to coat.
Place eggplant on prepared baking sheet making sure the pan is not overcrowded.
Broil eggplant for 7 to 10 min then flip and broil another 5 to 7 min (or until desired crispiness)
