INGREDIENTS
1 bag frozen cauliflower rice
1/2 white potato (peeled and diced)
1 laughing cow cheese wedge OR 1 T. cream cheese
1 teaspoon butter or ghee
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt & pepper (to taste)
almond or 2% milk (for desired consistency)
DIRECTIONS
Add potato to a microwave-safe bowl with a little water. Microwave for 2 to 3 minutes or until soft.
Set potato aside and add cauli-rice to the microwave-safe bowl and heat for 3 min. (or until thawed)
Place cooked cauli-rice, potato, and remaining ingredients in food processor or blender.
Add milk & blend until mashed potato consistency is reached. Add more garlic powder or salt and pepper to taste.
