Cauli-Mashed Potatoes

Cauli-Mashed Potatoes

INGREDIENTS

  • 1 bag frozen cauliflower rice

  • 1/2 white potato (peeled and diced)

  • 1 laughing cow cheese wedge OR 1 T. cream cheese

  • 1 teaspoon butter or ghee

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • salt & pepper (to taste)

  • almond or 2% milk (for desired consistency)

DIRECTIONS

  1. Add potato to a microwave-safe bowl with a little water. Microwave for 2 to 3 minutes or until soft.

  2. Set potato aside and add cauli-rice to the microwave-safe bowl and heat for 3 min. (or until thawed)

  3. Place cooked cauli-rice, potato, and remaining ingredients in food processor or blender.

  4. Add milk & blend until mashed potato consistency is reached. Add more garlic powder or salt and pepper to taste.
