INGREDIENTS:
1 small yellow squash
1 small zucchini
1 small green bell pepper
1/2 medium red bell pepper
2 mini cucumbers
1 15oz. canned corn, drained
1 15oz. canned black beans, drained
1/2 med red onion, chopped
1/3 cup cilantro, chopped
10 mini carrots, chopped (or 1 regular carrot)
Dressing—
Juice of 2 limes
2 TBSP Olive oil
2 tsp honey
1/2 tsp salt
1/4 tsp pepper
1. Chop all veggies into small pieces & add to large bowl.
2. In a small bowl, mix dressing ingredients together then toss over salad.
3. Enjoy!
Joy’s Notes—-
*Add Chicken, grilled turkey burger, or other protein to make this a complete meal!
*Adjust veggies to your liking.
*Add avocado 🥑 to top of salad and/or tortilla chips on the side for some crunch!!
