Crispy Salmon Patties

INGREDIENTS:

  • 2 fresh or frozen salmon fillets, cooked OR 1 14.75 oz canned salmon,drained

  • 1/2 cup + 3 TBSP breadcrumbs

  • 2 tbsp nutritional yeast (or Parmesan)

  • 1 egg

  • 1/4 cup onion, chopped small

  • 1 TBSP lemon juice

  • 1/2 tsp salt + 1/4 tsp pepper

  • 1 TBSP parsley

  • 2 TBSP Avocado oil

DIRECTIONS:

     1.      Flake cooked salmon w/a fork or drain if using canned salmon.
        2.      Add salmon to remaining ingredients (minus the avocado oil) in a bowl. Mix until Incorporated.
        3.      Create 6-8 patties about 3” thick.
        4.      Warm oil in skillet over medium high heat and lightly fry the patties. 3 minutes on each side until golden.

Creamy lemon 🍋 Dill Sauce

4 oz. Plain Greek yogurt
1/3 cup mayo
1 1/2 TBSP lemon juice
1 garlic clove, minced
1 1/2 TBSP fresh dill, chopped OR 3 tsp dried
1 TBSP chives, chopped OR 1/2 tsp onion powder
Dash red pepper flakes
Salt & pepper to taste

Combine all ingredients together with the whisk until combined.
