Easy Egg Muffins

I whip these up as meal prep for a whole week...you can adjust whatever toppings you like! They are filling & DELISH!

Easy Egg Muffins

INGREDIENTS

  • 10 eggs

  • 1 can Rotel (drained)

  • breakfast protein of choice (sausage, bacon, ham, etc)

  • green onions

  • splash of milk

DIRECTIONS

  1. Spray a 12-cup muffin pan with non-stick cooking spray. Set aside.

  2. Whisk eggs together in a large bowl.

  3. Add the rest of the ingredients into the eggs and stir to combine.

  4. Pour egg mixture into the prepared muffin pan.

  5. Bake at 375° for 15-20 min! Store in air tight container for the week!

    *Pair with a fruit!
