I whip these up as meal prep for a whole week...you can adjust whatever toppings you like! They are filling & DELISH!
INGREDIENTS
10 eggs
1 can Rotel (drained)
breakfast protein of choice (sausage, bacon, ham, etc)
green onions
splash of milk
DIRECTIONS
Spray a 12-cup muffin pan with non-stick cooking spray. Set aside.
Whisk eggs together in a large bowl.
Add the rest of the ingredients into the eggs and stir to combine.
Pour egg mixture into the prepared muffin pan.
Bake at 375° for 15-20 min! Store in air tight container for the week!
