Easy Protein Peppermint Bombs

INGREDIENTS:

        •       1/3 cup coconut oil, melted
        •       1 packet (or scoop) vegan or whey vanilla protein powder (I use vegan snickerdoodle shakeology.)
        •       1-2 TBSP maple syrup
        •       Crushed up peppermint (3-4)

DIRECTIONS:

1. Stir together the melted coconut oil + protein powder and maple syrup in a bowl. Then fold in crushed peppermint.

2. Add mini cupcake liners to a mini cupcake pan and add mixture for each mini "cup".

3. Add pan to freezer to let harden. About 30 min-1 hour. *I like to store in freezer in a reusable silicone bag! Pop one out anytime you’ve got a sweet tooth & it does the trick everytime!

*You can really get creative here & make some yummy creations! I’ve done crushed up pretzels , gingerbread cookies, animal crackers, sprinkles, etc…it’s fun to switch up the protein powder flavors too! Hope you enjoy !
