INGREDIENTS
1/2 cup egg whites
1/2 cup oats
1/2 scoop vanilla protein powder
1/2 cup canned pumpkin OR 1/2 medium banana
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1/8 teaspoon nutmeg
2 packs Stevia
2 tablespoons Pumpkin Pie Spice Skinny Syrups OR 1 teaspoon vanilla extract
pinch of salt
blueberries (optional)
DIRECTIONS
Place oats in blender and blend until it has a flour-like consistency.
Add remaining ingredients and blend until smooth.
Heat up griddle to medium-high heat. Spray the griddle or pancake pan and pour batter to create pancakes. Top with blueberries if desired.
Cook 2-3 min each side.
Enjoy with butter and sugar-free syrup!
