Fluffy Protein Pancakes

INGREDIENTS

  • 1/2 cup egg whites

  • 1/2 cup oats

  • 1/2 scoop vanilla protein powder

  • 1/2 medium banana

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon cinnamon

  • 1/8 teaspoon nutmeg

  • 2 packs Stevia

  • 1 teaspoon vanilla extract

  • pinch of salt

  • blueberries (optional)

DIRECTIONS

  1. Place oats in blender and blend until the oats become a “flour” texture.

  2. Add remaining ingredients and blend until smooth.

  3. Heat up griddle on medium heat. Spray the pan, and pour batter to create pancakes. Top with blueberries if desired.

  4. Cook 2 to 3 minutes on each side.

  5. Enjoy with butter and/or sugar-free syrup. Spice it up with other toppings!
