INGREDIENTS
FOR THE SALAD
1 small zucchini (chopped)
1 small cucumber (chopped)
2 tablespoons thinly sliced red onion
1 tomato
blue cheese crumbles
oregano
salt and pepper (to taste)
1 - 2 tablespoons balsamic vinaigrette
FOR THE DRESSING
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon dijon mustard
2 teaspoon honey
salt & pepper (to taste)
DIRECTIONS
Assemble the salad and pour on the dressing! Easy peasy!
