Joy’s Sweet Potato Breakfast

INGREDIENTS

  • medium sweet potato

  • coconut or almond milk

  • vanilla extract

  • salt (to taste)

  • dash of cinnamon

  • 1 tablespoon butter

  • drizzle of honey

  • nuts (optional)

  • sliced bananas (optional)

  • fresh blueberries (optional)

  • nut butter of choice (optional)

  • Greek yogurt (optional)

DIRECTIONS

  1. Microwave the sweet potato in the microwave until soft (about 6 to 8 minutes).

  2. Pour a splash of coconut or almond milk with a splash of vanilla and salt on the top.

  3. Add cinnamon, butter, honey, coconut, nuts, sliced banana, blueberries, and nut butter of choice. (feel free to add any toppings you want!)

  4. Top it off with plain Greek yogurt. (this is a nice offset to all the sweetness)

  5. ENJOY!!
