Mexican Coleslaw

INGREDIENTS

  • 14 oz. shredded coleslaw

  • 1 cup shredded red cabbage

  • 1/2 cup canned or fresh corn (drained)

  • 1/3 cup red onion (chopped)

  • 1/2 cup red bell pepper (chopped)

  • 1/2 cup black beans (drained)

  • fresh cilantro (optional)

  • pepitas (optional)

  • guacamole (optional)

  • green onions (optional)

FOR THE DRESSING

  • 3/4 cup avocado or light mayo

  • 1/3 cup plain greek yogurt

  • 1 1/2 tablespoons T. lime juice

  • 1/2 pack taco seasoning OR 1 1/2 tablespoons DIY taco seasoning

DIRECTIONS

  1. Add first six ingredients and stir in 1/2 cup of dressing.

  2. Let sit overnight and top with cilantro, pepitas, guac, green onions or any other toppings of choice.

NOTES

  • Add a protein to make this a complete meal! (salmon, two fried eggs, chicken, etc.)

  • Can be eaten cold OR slightly warm.
