INGREDIENTS
14 oz. shredded coleslaw
1 cup shredded red cabbage
1/2 cup canned or fresh corn (drained)
1/3 cup red onion (chopped)
1/2 cup red bell pepper (chopped)
1/2 cup black beans (drained)
fresh cilantro (optional)
pepitas (optional)
guacamole (optional)
green onions (optional)
FOR THE DRESSING
3/4 cup avocado or light mayo
1/3 cup plain greek yogurt
1 1/2 tablespoons T. lime juice
1/2 pack taco seasoning OR 1 1/2 tablespoons DIY taco seasoning
DIRECTIONS
Add first six ingredients and stir in 1/2 cup of dressing.
Let sit overnight and top with cilantro, pepitas, guac, green onions or any other toppings of choice.
NOTES
Add a protein to make this a complete meal! (salmon, two fried eggs, chicken, etc.)
Can be eaten cold OR slightly warm.
