White Bean & Bacon Soup

INGREDIENTS

  • 1 tablespoon olive oil

  • 1 medium onion

  • 1 cup celery

  • 1 cup carrots

  • 1 cup butternut squash (optional)

  • 2 cans cannelloni beans, rinsed & drained

  • 4 cloves garlic

  • 1 teaspoon thyme

  • 1 teaspoon oregano

  • 1/2 teaspoon rosemary

  • 1/2 teaspoon sage

  • 2 cups chicken broth

  • 1 cup water

  • 2 cups kale or spinach

  • 4 - 5 strips cooked bacon, chopped

  • 1/2 lb cooked ground turkey meat (optional)

  • Salt & pepper to taste

DIRECTIONS

  1. Warm olive oil in pot on medium high heat and cook veggies until soft.

  2. Add garlic, spices, beans, turkey meat, chicken broth, and water. Add in salt and pepper to taste. Bring to a boil; then reduce heat and simmer for 15 minutes.

  3. Remove two cups and blend mixture together for a creamier soup. (This step is optional, but you can do it any way you choose!)

  4. Return blended amount to pot. Then add kale & bacon. Let simmer 5 more minutes.

  5. Serve with a dollop of sour cream, more bacon crumbles, and green onions!
