Southwest Hash

This has MASSIVE amounts of flavor, good protein, and my favorite carb -sweet potatoes!

This can be eaten for breakfast, lunch or dinner! 

Southwest Hash

INGREDIENTS

  • 1/2 medium sweet potato (diced)

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon season salt

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon paprika

  • 1/4 cup black beans (drained & rinsed)

  • 1 cup spinach

  • green onions

  • homemade or bought pico de gallo

  • 2 eggs

  • cooking spray

  • 1/4 avocado

  • 1 - 2 tablespoons plain Greek yogurt

DIRECTIONS

FOR SWEET POTATO BITES

  1. Preheat oven 425°.

  2. Place diced sweet potato in bowl and spray with cooking spray or drizzle with 1 - 2 t. olive oil.

  3. Sprinkle with seasonings and stir to coat.

  4. Then, place on sprayed baking sheet. (Make sure sweet potatoes are spread out enough and NOT touching. This ensures that they get crispy all around.)

  5. Cook on bottom rack for 20 - 30 min or until desired crispness.

FOR THE HASH

  1. Spread black beans on top of sweet potato bites.

  2. Sauté the spinach with garlic powder, salt, pepper, and green onions (optional) in a pan for 2 minutes on medium heat.

  3. Place spinach on top of sweet potatoes & black beans.

  4. Fry two eggs in a skillet (or over-easy) and season with salt & pepper and place on top of hash.

  5. Spoon fresh pico on the side of hash with avocado and Greek yogurt. (*Tip: You can mix paprika, lime juice, and garlic powder together in the Greek yogurt for a little more southwest flavor on top!)
