INGREDIENTS
3 - 4 cups fresh okra⠀
2 tablespoons cornmeal⠀
1 1/2 tablespoons Panko breadcrumbs⠀
1 teaspoon onion powder⠀
1 teaspoon garlic powder⠀
cooking spray⠀
1 tablespoon olive oil
sea salt (to taste)⠀

DIRECTIONS
Heat pan to medium-high heat.
Wash and slice okra and place in a medium-sized bowl.
Spray with cooking spray and add remaining ingredients. Toss to coat. (add more spray is mixture is too loose)
Add the oil to the pan and “fry” the okra until golden brown, stirring occasionally. Add more cooking spray if all the oil absorbs.

NOTES
Use this same recipe for a healthier fried squash!⠀
You can also bake the okra on 450° for 15 to 20 minutes! Make sure to flip about halfway through cooking to get both sides crispy.
