Peppermint Mocha Protein Balls

INGREDIENTS:

  •  1 cup old fashioned rolled oats little less than 1/4 cup honey

  • 1/2 teaspoon coconut extract

  • 1/2 teaspoon peppermint extract 1 scoop Vegan Chocolate Shakeology (see notes)

  • 1/2 cup almond or peanut butter (I used almond)

  • 2 TBSP coconut (or more) 

  • 4/5 crushed up peppermint( I used the soft melt in your mouth ones -see pic )

DIRECTIONS:

  1. Mix all ingredients together and roll into balls. (Reserve some peppermint to roll balls in at the end)

  2. Chill in refrigerator or freezer for 2-3 hours until ready to eat! (I prefer to keep mine in the freezer & pop them out when I need a sweet treat!)

I usually get about 20-24 protein bites from this recipe! If you don't have vegan chocolate shakeology you could do any regular chocolate protein powder.
