INGREDIENTS: (*4 servings)
1/2 cup red & green bell peppers (mixed)
1/2 medium onion, chopped
2 tsp olive oil
8 eggs
1/4 tsp salt
1/2 tsp pepper
2 TBSP fresh parsley (optional)
4-5 fresh basil leaves, chopped (optional)
2 cups spinach,chopped
3 TBSP bacon bits
3/4 cup cottage cheese (optional but adds more protein)
*Shredded cheese (optional for topping)
*Avocado 🥑 (optional for topping)
DIRECTIONS:
1. Sauté peppers & onion w/1 tsp olive oil in a cast iron skillet. Then set aside.
2. Beat eggs in separate bowl & fold in salt, pepper, parsley, basil, spinach, bacon bits, & cottage cheese. Then add to skillet.
3. Cook in skillet on medium heat until set just around edges. (1-2 min)
4. Pop skillet in oven & cook for 400° 15-20 min
5. Remove & cut into 4 slices. Top with shredded cheese and/or avocado 🥑 if desired.
Joy’s notes—-
*You can totally switch up the veggies in this to your liking—-think omelette but baked! (Asparagus, mushrooms, broccoli, green onions, etc would all be amazing!)
*Drizzle the top with/olive oil for a finishing touch + more healthy fats!
*This pairs perfectly w/fresh peaches 🍑, nectarines or any fruit of choice.
*Add sautéed kale 🥬 on the side for more veggies!!
