Pumpkin Pasta Bake

INGREDIENTS

  • 4 chicken or Italian sausage links⠀

  • 1 tablespoon minced garlic⠀

  • 1 jar pizza sauce ⠀

  • 1/2 cup water⠀

  • 1 15 oz. can pure pumpkin⠀

  • 4 tablespoons parmesan cheese (divided)⠀

  • 1 14.5 oz box whole wheat or chickpea pasta (cooked)⠀

  • 1 cup mozzarella cheese⠀

DIRECTIONS

  1. Preheat oven to 375°. Spray a 3 quart casserole dish or 13 x 9“ baking dish with nonstick cooking spray.⠀

  2. Cook chicken sausage in large skillet over medium high heat until cooked through.

  3. Stir in garlic and pizza sauce. Add water, pumpkin, and 2 tablespoons parmesan cheese.

  4. Then stir in prepared cooked pasta. Sprinkle with remaining 2 tablespoons Parmesan cheese and mozzarella cheese, cover.⠀

  5. Bake for 15 minutes or until cheese is melted. Bake an additional 5 to 7 minutes or broil on high until cheese is browned and bubbly.
