INGREDIENTS
4 chicken or Italian sausage links⠀
1 tablespoon minced garlic⠀
1 jar pizza sauce ⠀
1/2 cup water⠀
1 15 oz. can pure pumpkin⠀
4 tablespoons parmesan cheese (divided)⠀
1 14.5 oz box whole wheat or chickpea pasta (cooked)⠀
1 cup mozzarella cheese⠀
DIRECTIONS
Preheat oven to 375°. Spray a 3 quart casserole dish or 13 x 9“ baking dish with nonstick cooking spray.⠀
Cook chicken sausage in large skillet over medium high heat until cooked through.
Stir in garlic and pizza sauce. Add water, pumpkin, and 2 tablespoons parmesan cheese.
Then stir in prepared cooked pasta. Sprinkle with remaining 2 tablespoons Parmesan cheese and mozzarella cheese, cover.⠀
Bake for 15 minutes or until cheese is melted. Bake an additional 5 to 7 minutes or broil on high until cheese is browned and bubbly.
