Roasted Eggplant

INGREDIENTS

  • 1 medium eggplant

  • 1 tablespoon olive oil

  • 1/4 teaspoon Italian seasoning

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

DIRECTIONS

  1. Slice eggplant into 1/2 inch slices and cut each slice cut in half.

  2. Place eggplant on sprayed baking sheet & brush with olive oil.

  3. Sprinkle with seasonings.

  4. BROIL eggplant in oven (about 10 min. each side) until crsipy.
