INGREDIENTS
1 1/2 cups pitted dates (make sure they are PITTED)
1/2 cup cashews
1 cup whole, raw almonds
3 tablespoons shredded coconut
2 tablespoons cocoa powder
1/4 teaspoon salt
1/3 cup unflavored Vital Collagen peptides
1/2 teaspoon coconut extract
1/4 cup (or more) Hershey’s Special Dark Chocolate Chips (optional)
3 to 5 tablespoons water
DIRECTIONS
Combine the dates, cashews, and almonds in a food processor or high-powered blender. Blend until everything comes together evenly.
Stop and scrape down the sides as needed. Then, add remaining ingredients (minus the choc chips).
Add water until a “dough” begins to form, but not too much as it can get sticky.
Stir in choc chips and then press in a pan.
Place in fridge to chill OR bake @ 300° for 15 to 20 minutes until browned edges.
NOTES: *You could use less cocoa powder or omit if you just want a coconut flavored bar.
*I baked mine & loved! But I’ll probably just chill the next time I make them to save time.
*I kept mine in the fridge until ready to eat.
