Chocolate Coconut RX Bars

INGREDIENTS

  • 1 1/2 cups pitted dates (make sure they are PITTED)⁣

  • 1/2 cup cashews⁣

  • 1 cup whole, raw almonds⁣

  • 3 tablespoons shredded coconut ⁣

  • 2 tablespoons cocoa powder ⁣

  • 1/4 teaspoon salt ⁣

  • 1/3 cup unflavored Vital Collagen peptides ⁣

  • 1/2 teaspoon coconut extract⁣

  • 1/4 cup (or more) Hershey’s Special Dark Chocolate Chips (optional)⁣

  • 3 to 5 tablespoons water ⁣

DIRECTIONS

  1. Combine the dates, cashews, and almonds in a food processor or high-powered blender. Blend until everything comes together evenly.

  2. Stop and scrape down the sides as needed. Then, add remaining ingredients (minus the choc chips)⁣.

  3. Add water until a “dough” begins to form, but not too much as it can get sticky.⁣

  4. Stir in choc chips and then press in a pan.⁣

  5. Place in fridge to chill OR bake @ 300° for 15 to 20 minutes until browned edges.⁣

    NOTES: *You could use less cocoa powder or omit if you just want a coconut flavored bar.⁣
    *I baked mine & loved! But I’ll probably just chill the next time I make them to save time. ⁣
    *I kept mine in the fridge until ready to eat. ⁣
