INGREDIENTS
1 lb. lean ground beef
1/2 small onion
1 small zucchini
1 cup tomato sauce
2 garlic cloves
2 - 10 oz. cans mild enchilada sauce
10 whole wheat tortillas (OLE Extreme Wellness is my fav.)
8 oz. mexican cheese blend
cooking spray
DIRECTIONS
Preheat oven to 350°.
In a large skillet over medium-high heat, cook ground beef. Drain fat. Add in zucchini, onion, garlic and cook for 5 minutes.
Add in 1 cup tomato sauce and 1 cup enchilada sauce.
Put tomato sauce in bottom of pan. Place about 1/2 cup of beef mixture in each tortilla and roll up like a burrito; lay seam side down in 13x9 dish.
Cook for 10 minutes, and then add remaining enchilada sauce and top with cheese.
Bake an additional 10 minutes or broil on high until cheese is bubbly.
*Top with salsa, guacamole, sour cream OR add a side of refried beans!
