Skinny Chicken Parmesan

INGREDIENTS

  • 2 chicken breasts

  • 2 tablespoons Italian seasoned breadcrumbs (use GF if needed)

  • 1 1/2 tablespoons parmesan cheese (use nutritional yeast of dairy free)

  • 2 teaspoons butter or ghee

  • 2 tablespoons shredded mozzarella cheese (or DF cheese)

  • 1/2 cup all natural pizza or marinara sauce (I prefer pizza sauce)

  • cooking spray

DIRECTIONS

  1. Preheat oven to 450° degrees. Spray baking pan with cooking spray.

  2. Combine breadcrumbs & parmesan cheese in a bowl. Then, melt butter and brush on chicken.

  3. Sprinkle breadcrumb/parmesan mixture on top of both chicken breasts.

  4. Lightly spray the tops of chicken with more cooking spray.

  5. Bake for 25 minutes.

  6. Remove from oven and spoon on 1 to 2 tablespoons of the sauce over each piece of chicken and top with 1 tablespoon of mozzarella cheese each.

  7. Bake 5 for more minutes or broil until cheese is melted and bubbly.

*Top with dried parsley.
*Add remaining pizza sauce to 1/2 cup cooked whole wheat or high fiber pasta noodles.
*This pairs great with a fresh salad or veggies of choice!
