The rhubarb really makes this parfait unique and oh so yummy paired with the sweet strawberries!
Also note the chia seeds! They may be tiny but they pack an incredible punch of micronutrients, omega-3 fatty acids, protein, and fiber.
This recipe has ALL THE GOODS!!
(serves 5)
CHIA SEED PUDDING
1 cup of plain whole milk yogurt (or Greek)
1 cup unsweetened almond milk
1/2 cup of chia seeds
1/4 cup honey
2 teaspoon vanilla extract
1/8 teaspoon fine sea salt
STRAWBERRY-RHUBARB COMPOTE
3 cups quartered strawberries
2 cups (about 3 stalks) chopped rhubarb, ends discarded
2 to 3 T. honey
2 T. water
DIRECTIONS
FOR THE PUDDING
In a medium bowl, combine the yogurt, milk, chia seeds, honey, vanilla extract, and salt.
Cover and refrigerate overnight or for at least two hours.
FOR THE COMPOTE
In a medium sauce pan, combine the strawberries, rhubarb, honey, and water. Simmer uncovered, stirring occasionally, until the rhubarb breaks down and the sauce thickens, about 15 minutes.
Cool completely before assembling. (this will allow the compote to thicken up even more)
TO ASSEMBLE
Layer the chia pudding, then the strawberry rhubarb compote in 4 or 5 half pint glass jars. Repeat these layers a second time.
*Top with granola or chopped nuts.
