Tortilla Pizza


INGREDIENTS

  • 1 whole wheat tortilla (I use Ole Extreme Wellness-high fiber)

  • 1/4 cup no sugar added pizza sauce (I use Great Value)

  • 1/3 cup mozzarella cheese

  • favorite pizza toppings (I use spinach, red bell pepper, mushroom, onions, sometimes turkey pepperoni or chicken sausage)

DIRECTIONS

  1. Preheat oven to 425°.

  2. Line baking sheet with foil and spray.

  3. Place tortilla on baking sheet. Then, add about 1/4 cup (or less) of pizza sauce to tortilla.

  4. Sauté mushrooms, onions, red bell pepper in separate pan with spray.

  5. Add 1/3 cup mozzarella cheese to tortilla, then add toppings.

  6. Bake for 10 minutes or until cheese is bubbly and brown. (Sometimes I turn to broil and watch carefully to get the cheese brown.)

  7. Sprinkle with parsley, parmesan, and slice it up!
